HACKLEBACK STURGEON
Wild hackleback sturgeon is the only commercially fished sturgeon in the United States and can only be found in a few North American rivers. The Mississippi River is one of the last legal wild sturgeon fisheries in the world. This wild fishery is heavily regulated by state and federal fish & game departments that set quotas per season, size limits per fish, designate “no fishing” zones, and limit the number of roe harvest licenses granted. Careful third party monitoring ensures the regulations are enforced.

SUSTAINABILITY
At Karl Bruce, sustainability means that we conserve energy and natural resources, support the ecology of the wild hackleback sturgeon, and conduct our business in a socially responsible manner.
While farmed sturgeon caviar is available as a form of responsible agriculture, our mission of sustainability motivates us to support the wild fisheries and help to ensure the longevity of the wild hackleback sturgeon as the last wild American caviar.
